There’s just something a big bowl of warm and comforting soup. This green soup recipe is loaded with fresh spinach and asparagus, and can also be seasoned with turmeric to give it a bit of a kick. 2 tbsp extra virgin olive oil
2 cups leeks, chopped
1 tsp minced garlic
2 cups asparagus, chopped
1 cup celery, chopped
450g fresh baby spinach
4 cups frozen peas
2 organic zucchinis, chopped
1 cup chopped fresh dill
10 cups chicken or vegetable stock
salt and pepper to taste
½ teaspoon turmeric (optional)
1. Sauté leeks and garlic in olive oil for five minutes.
2. Add the rest of the vegetables and mix gently for five more minutes.
3. Add stock and spices and bring to a boil.
4. Lower heat and cook for 30 minutes. Blend and enjoy!
